Chocolate and olive oil cream recipe:
- Ingredients
- Dessert For 4 people
- 110 g of extra dark chocolate, 72% cocoa
- 3 dl of whole cream
- 3 tablespoons olive oil
- 3 tablespoons of sugar
- 70 g of walnuts
- 1 tablespoon butter
- Sea fleur
Procedure
- Break 100 g of chocolate into pieces and place in a pan with 1 dl of cream. Melt over low heat, stirring constantly, then leave to cool. Whip the rest of the cream until stiff, then gently fold it into the melted chocolate along with the olive oil. Refrigerate for at least 30 minutes.
- Caramelize the sugar in a pan. Add the nuts and butter and mix well
all. Pour the mixture onto a sheet of baking paper and let cool. - Melt the remaining chocolate and use a brush dipped in chocolate to create decorations on the plates. Chop the caramelized walnuts, distribute them in the center of the plates and season with a pinch of fleur de sel. Using two spoons, create chocolate quenelles and arrange them on the caramelized walnuts.
